My wife is from Sichuan and Chinese New Year is a big deal. Iβve had hot pot all over China in restaurants both famous and fancy, and simple and basic. We bought this Aroma unit just for New Yearβs. Itβs what weβve always been searching for. No worries about construction quality. The metal is a solid and confident gauge. It boils really fast! Temps are maintained at any temp easily.The center portion boils first and does stay very slightly hotter than the outer portion. But this is of no practical consequence or worry. A few reviews complain of liquid seeping from the center to the outer ringβNO PROBLEM! All works perfectly.We also prefer this to the other popular model it competes with because the outer portion holds about twice as much as the center area. Everyone around the table can reach the outer ring area easily. And, it’s not a difficult reach for anyone to reach the centers section if that’s where you cook your spicy soup, or a particular type of meat.Now that we have this beautiful pot, and a new meat slicer, hot pot will be happening all the time at our house!

I have another hotpot that is made for an electric stovetop or gas stove that is basically the same idea: there is a central well and an outer ring that allows you to have two different broths at the same time. The other one I have the central well is narrower at the bottom, such that the energy that goes into the central well is less. In this one, the bottom area of the central well is the same diameter as the top rim, meaning that a large fraction of the heating power goes into the central well. As a result, the center well needed to be replenished much more often than the outer ring. We’ll have to see if I get used to that. I put the spicy broth in the outer ring and the mild broth in the center. However, it is possible that if I put the spicy broth ( which is much oilier) in the middle, it might reduce evaporation there. The gauge of the metal is pretty thin. The upper part (excluding the lid and the heater base) weights 657 grams, while my other stovetop one of similar size weights just short of 1 kilogram. However, the dining experience did not seem to be adversely affected by the thin gauge. It was not too noisy (as some thin pans are), and except for the center well drying out much faster, I have no complaints.

Works well for what it does. Iβd recommend putting food coloring in each cavity. Look at the attached photo. Do each separately, put water with food coloring in one and just water in the other. Heat it up for about 30 minutes. If there is any leaks youβll see the color in the one with plain water.Empty and repeat the process but put water in food coloring in the one that was plain water and plain water in the one that had food coloring. Heat and see if there are any leaks.

The pot is unable to maintain a boil on high setting with the lid off. Inner ring stays boiling mostly, but the outer ring struggles to maintain a boil without lid. Takes significantly more time to cook something in the outer ring.
