   What I was really looking for was a battery powered knife. But, the few available have terrible ratings so I wound up purchasing this corded knife. I wanted to replace a corded Hamilton Beach model that we’ve had for a number of years. As some have noted, in many homes these knives come out only on holidays to carve the meat. This was true for us, but, we have recently gotten interested in bread making, albeit, cheating by using a bread machine. The hardest thing about making your own bread is slicing it (I guess that’s why someone invented “sliced” bread). If you try to use a standard bread knife, you have to hold the loaf so tightly that you “crush” it. What you end up with is a slice shaped like an hourglass and about 5 inches tall by 1 inch wide. An electric knife solves this problem although it takes some practice to cut a “straight” slice. The Hamiton Beach machine did okay but it seemed to be slower than it should have been so I started thinking that it might be dull. Looking at the many corded knives on Amazon, there didn’t seem to be any that were that highly rated. The prices for most knives were in the $25 range, about half of the price of this knife. I reflected on problems I had with the Hamilton Beach. The biggest problem is that if you want to use if daily, you have to leave it on the kitchen counter. The knife with the blade installed takes up a lot of room since it has to “lie” down. It’s too much work to remove the blade, unplug it, and store it in a cabinet. This Cuisinart solves that problem by allowing you to store the unit vertically. It’s pretty easy to remove the blade and return the blade and knife back to the storage block. But, one of its most important features is that it looks really cool on my countertop. Even if it fails, I will keep it there just to impress my friends when they come over. The unit also has a more flexible cord than the Hamilton Beach. The Hamilton Beach cord had a mind of its own and would always seem to jump in front of the blade just as I was ready to cut something. The Cuisinart seems to cut at about the same speed as the Hamilton Beach so I don’t think that the Hamilton Beach knife was actually dull. If I could add anything to the Cuisinart, I would add MORE blades. This would make the knife even cooler! There should be an EPEE sword blade (I was on the fencing team in college), a pruning blade for working in the garden, and perhaps even a small steak knife blade for cutting those cheap cuts of meat that we have to buy because meat has become so expensive. Summing up, I haven’t used this knife very long, I’ve not yet used it to cut meat, and I know that it has been poorly reviewed by some. But, if you’re go to pay $25 for an electric knife and take your chances, why not pop another $25 and get something really cool!

   When my old GE electric knife died, it was a sad day. My 30-year-old knife had served me well, but when the motor failed, it was done and I had to find an appropriate replacement. Of all that I found, I like the design of this product best. I read lots of reviews, both good and bad, and read product comparisons through many articles and decided to take a chance on this product. I’ve not really used it much yet, but so far it’s meeting my expectations.One of the things I like best is how the safety switch works… unlike other knives that require you to depress a slide button in the trigger each time you start the knife, this one clicks and stays in a locked or unlocked position, just like my old GE. If I had to use two hands to unlock the switch each time I started the knife, I would be throwing it out in short order. Safety is important, but overall usability is why we choose products.As everyone else has said, the knife motor section simply doesn’t fit in its holder in the knife block. After looking at the block for about 1 minute, it became quite clear that the plastic “holder” for the back end of the knife was not made to fit the shape or contour of the knife end. I read where others removed the plastic block, drilled new holes and moved it downward on the block about 1/2 an inch to accommodate the handle, but that would impact the blade holder as well, making it ineffective. After close inspection, one can see that the area that cradles the rear of the knife is actually a plastic insert, and it’s shape suggests that it was designed for the previous version of this knife. I removed the two screws holding the plastic block onto the wooden block, then easily removed this plastic insert from the knife block, then reinstalled the plastic block onto the wooden block. The knife now fits perfectly.I’m currently giving this product 4 stars because of the design flaw with the knife block. I find that inexcusable. I’ll update my post after the holiday season, when this knife undergoes a real performance test.

   My only disappointment with this knife is that it did not include a sheath for the serrated blades.They’re a real bugger to sharpen when they need it.

   My father had an electric knife and this brought back some memories of carving family dinners for the holidays and for a few other things. This is really a great knife easy to use and cut really well through the bone in prime rib. I had five different people try it out for this dinner as we were serving buffet style and all of them were surprised it worked so well.

   The on/off button at first seemed so comfortable. But the knife does not consistently engage when the button is depressed – my finger needs to rock the button back and forth for it to work.After some time, my thumb was very sore (have arthritis).VERY disappointed. Too late to return.Be careful if you have arthritis.
