I was considering buying the Breville EW30XL wok but balked at the non-stick surface scratching issues that I’d read other consumers were experiencing. In all fairness to Breville this is what they wrote me about the non-stick scratching issue people are experiencing:The coating used in our EW30XL is a very high quality coating called Quantanium, made by Whitford. We recommend using wooden utensils and avoiding the use of excessive oil. This product has less than a 1% defective rate currently. I pondered buying the Breville EW30XL but ended up buying the Presto 5900 Stainless Steel Wok. I figured no matter how careful I’d be with the EW30XL it’d eventually become scratched due to my negligence just like the rest of my other non-scratch surface type kitchen pans. I’m sure you wouldn’t go wrong with the Breville EW30XL wok given the proper care and attention. A few days after I purchased the Presto 5900 Stainless Steel Wok I tried out one of the recipes that came with the instructions and it came out great (Chicken with Snow Peas, Carrots and Bean Sprouts). The vegetables came out nice and crisp and the chicken wasn’t tough or dried out. It was a big improvement over the way I used to cook stir fry which was cooking with a traditional wok, the kind with the ring that the wok sits on while it’s cooking on the range. I cooked over a natural gas range that wasn’t calorific enough to provide the satisfactory results needed for a good stir fry. This resulted in everything I stir fried coming out lukewarm and mushy. One thing you’ll have to pay attention to when you’re cooking with the Presto 5900 Stainless Steel Wok, is that you’ll have to have all of your “ducks in a row”. In other words, you can’t be reading the recipe trying to figure out what happens next in the recipe or cutting ingredients while the Presto wok is sizzling away at 375 degrees temp … you might over-stir fry whatever you’re cooking at the time. The Presto 5900 Stainless Steel Wok is a nice unit and I can’t wait to try other recipes with it. After so many years I’ve finally been able to enjoy a hot stir fried meal instead of my usual lukewarm and mushy stir fry. I really enjoyed that. I almost forgot … the short cord wasn’t a problem for me, in fact, if it was any longer I’d have a conflict with all of the other cooking things I have cluttered on my counter top. I’d end up with a tangled, coiled up mess if the cable was any longer. In fact, the length was perfect. That doesn’t mean the short cable length will work for everyone as we’ve read in the other reviews, so, you’d have to see for yourself to make the final decision. A small extension cord will fix any cable length issue so it shouldn’t be a problem. Good luck, everyone, regardless of what you end up buying.

Bought this for my roommate who is disabled, but loves to cook. Prior to becoming disabled, he had always used a regular non-electric wok on his gas stovetop. He never washed his wok – just wiped it down to keep it seasoned. He made the best stir fry ever! A stroke messed up his left hand and now he has trouble managing any stove-top pot or pan. Some of the reviews had me a little hesitant but decided to go for it. Turns out this is a great little appliance. Even better, it’s a breeze for my disabled roommate to use! He says it’s as close to a real “over-a-gas-flame” wok you can get. He actually had to show me how to use it – and now I’m hooked too!It is pretty big so make sure you have someplace to store it when not in use. It’s super easy to clean (submersible and dishwasher safe). PLEASE NOTE: This is NOT a non-stick wok! But in our opinion, makes for much better tasting food. Best to wash immediately after use with only very mild soap and water. As long as it’s still a little hot, anything burned or stuck cleans right up.It comes with a somewhat small wooden cooking utensil but a metal wok spatula works best so you can scrap up all the goodness that sticks to the bottom of the wok during the cooking process. Best of all, it produces Asian food like it came straight from a Chinese/Thai/Japanese/Korean restaurant. Tonight I’m going Mexican and making fajitas which also require high heat to come out right!It gets super hot, super fast and we start it off at around 350 degrees, and turn it up if needed. Always let it pre-heat. When cooking with high heat, always, always, always have your ingredients prepared first. Any hesitation or stopping during the cooking process and the thing will smoke up the house while you scramble around trying to catch up before your smoke alarm goes off. Can’t say it enough: ALWAYS have the food prep done way before you start cooking.Wok oil is a must. Depending on what ingredient you start off with first (meat or veggies) always let it heat back up before adding the second batch of ingredients. Haven’t tried any deep frying yet, but the same applies. Start with the heat low and adjust accordingly.Only thing missing that would make this product complete is a tempura rack.After a little food prep, at the end of only a matter of maybe 5-10 minutes actual cooking time, you’ll have a wonderful meal ready to go! We absolutely love this particular wok and very happy with out purchase. Would definitely recommend!

I’ve had this a few months so it’s taken me this long to use it a few times so I could more accurately rate it. My first try wasn’t the best so keep reading beyond this part…bear with me. First time I somehow created a horrible oily mess on the kitchen floor (of all places.) I figured out this was due to too much oil and oil vaporizing so steamy oil was flying all over. I was sliding around…It was hot water and dawn and hands & knees to clean & de-grease the floor in the immediate area of my wok. I also scorched the food. This is easily remedied by using what they tell you in the instructions to clean it!! Read all instructions first. It did clean up beautifully. 2nd & 3rd tries were great! I think less oil plus use the cover, or at least use a splatter screen. Tendency to scorch on bottom: use recommended setting! If you still get a bit of scorch, de-glaze using some wine which works wonderfully. Today used it for a big batch of unstuffed bell peppers and everything was great! Again on the instructions – prep all of your meat/veg ahead of time because things will cook fast and you’re moving quickly. Ended up really loving this wok! Worth it to learn & get the hang of it.
